Buttermilk Pie

Ingredients
  

  • 3 eggs beaten
  • 1/2 cup butter melted and cooled
  • 1 cup buttermilk
  • 1 tsp vanilla
  • 1 1/2 cup sugar
  • 3 T flour
  • 1 9- inch pie crust

Instructions
 

  • Heat oven to 400°.
  • Beat eggs well. Add buttermil and vanill.
  • Combine sugar and flour. Add to buttermilk/egg mixture.
  • Add butter; blend well.
  • Pour into an unbaked pie crust in a 9-in pie pan. Bake at 400° for 5 minutes and then reduce heat to 350° and bake for an additional 45-50 minuters or until filling is set. Cool to room temperature and then chill.

I was introduced to Buttermilk Pie by Ruth Best, Falfurrias ISD school teacher. I was thoroughly taken with this pie but every recipe I found made a pie too sweet. Ruth wrote her recipe down for me and I finally understood why. Most recipes called for 2 cups of sugar. She had cut back the sugar by 1/2 cup. This makes a buttermilk pie that is sweet but not too sweet.
