Buttermilk Pie
Ingredients
- 3 eggs beaten
- 1/2 cup butter melted and cooled
- 1 cup buttermilk
- 1 tsp vanilla
- 1 1/2 cup sugar
- 3 T flour
- 1 9- inch pie crust
Instructions
- Heat oven to 400°.
- Beat eggs well. Add buttermil and vanill.
- Combine sugar and flour. Add to buttermilk/egg mixture.
- Add butter; blend well.
- Pour into an unbaked pie crust in a 9-in pie pan. Bake at 400° for 5 minutes and then reduce heat to 350° and bake for an additional 45-50 minuters or until filling is set. Cool to room temperature and then chill.

I was introduced to Buttermilk Pie by Ruth Best, Falfurrias ISD school teacher. I was thoroughly taken with this pie but every recipe I found made a pie too sweet. Ruth wrote her recipe down for me and I finally understood why. Most recipes called for 2 cups of sugar. She had cut back the sugar by 1/2 cup. This makes a buttermilk pie that is sweet but not too sweet.
