Chipotle-Blue Cheese Dressing
Ingredients
- 2 large shallots unpeeled
- 1 cup mayonnaise
- 1/2 cup buttermilk
- 1 cup crumbled artisan blue cheese
- 1 chipotle canned in adobo minced
- 2 tsp adobo sauce from canned chipotles
- 1/4 tsp gresh ground pepper
- 1/2 tsp salt
Instructions
- Heat oven to 350°.
- In a baking dish, roast shallots until tender and lightly caramelized. Remove from oven and when cool enough to handle, peel and mince the shallots.
- Combine shallots and remaining ingredients, mixing well. Store in refrigerator.
- Serve as a salad dressing or dip or a sauce for meats.
