Chipotle-Blue Cheese Dressing

Ingredients
  

  • 2 large shallots unpeeled
  • 1 cup mayonnaise
  • 1/2 cup buttermilk
  • 1 cup crumbled artisan blue cheese
  • 1 chipotle canned in adobo minced
  • 2 tsp adobo sauce from canned chipotles
  • 1/4 tsp gresh ground pepper
  • 1/2 tsp salt

Instructions
 

  • Heat oven to 350°.
  • In a baking dish, roast shallots until tender and lightly caramelized. Remove from oven and when cool enough to handle, peel and mince the shallots.
  • Combine shallots and remaining ingredients, mixing well. Store in refrigerator.
  • Serve as a salad dressing or dip or a sauce for meats.
