Traditional Cheesecake

Plain Cheesecake Crust

Ingredients
  

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup confectioners' sugar
  • 1/3 cup unsalted butter melted
  • 1/8 tsp salt

Instructions
 

  • Crush 9 to 10 whole graham crackers. Stir in remaining ingredients.
  • Press into the bottom of a 9" springform pan.

Philadelphia Cheesecake Filling

This classic Cheesecake Filling is best with a graham cracker crust.

Ingredients
  

  • 4 8- oz. packages Philadelphia cream cheese softened
  • 1 cup sugar
  • 1 tsp vanilla
  • 4 eggs

Instructions
 

  • Beat cream cheese, sugar and vanilla with mixer until well blended. Add eggs one at a time, mixing on low speed after each just until blended. Pour over crust.
  • Bake at 325° for 55 minutes or until center is almost set. Loosen cake from rim of pan; cool before removing rim. refrigerate 4 hours.

This cheesecake is often served with a cherry topping that is really just a can of cherry pie filling. You could use just about any fruit pie filling and it would still be good.

You could also make a fruit cream topping that is not quite as sweet by folding a 1/2 cup of just about any fruit jam or preserves into 2 cups of whipped cream. Spread that on top of your cheesecake or drop a dollop on top a slice when you serve it.
