Castagnaccio
An 1500's era Italian cake made with chestnut flour. I have made a few modifications.
Ingredients
- 1 1/2 cup chestnut or almond flour
- 2 1/2 Tbsp sunflower or peanut oil
- 1 1/2 cup water
- 1 Tbsp toasted pine nuts toasted and coarsely chopped
- 5 Tbsp raisins ground
- 3 Tbsp figs coarsely chopped
- 1 pinch of salt

- 1 Tbsp pine nuts
- 2 Tbsp raisins
- 2 Tbsp figs sliced
- Rosemary needles
Instructions
- Mix the flour and the water into a bowl and mix together
- Add the sunflower oil and continue to mix untill the mixture is really smooth
- Add toasted pine nuts, ground raisins and chopped figs into the mixture and mix well
- Pour the mixture into a 9-in cake pan
- Decorate with the pine seeds, raisins, figs and rosemary needles
- Bake at 350 degrees F for 40 minutes
- Let cool down for a bit and serve with creme fraiche
