This is a potluck favorite. Easy to transport and easy to finish on site. Better yet, everyone loves it. Double the recipe if you are feeding a crowd. You will not have leftovers to take home.
Asian Slaw
Economical and easy. Travels well. Mix all ingredients and toss with dressing just before serving.
Ingredients
- 4 cups shredded cabbage
- 1 cup shredded carrots
- 1 onion finely chopped
- pinch of salt and pepper
- 1 1/2 T seasoned rice vinegar
- 1/2 cup mayonnaise
- 1/2 tsp sesame oil
- 1/2 tsp sriracha sauce
- 1/2 tsp sugar
- 1 T sesame seeds or chopped peanuts
Instructions
- Toss cabbage, carrots, onion and salt in a bowl. Season with pepper.
- Whisk together vinegar, mayonnaise, sesame oil, sriracha, and sugar until smooth. Add a little salt if needed.
- Pour dressing over vegetables and toss to combine. Serve chilled. Toss before serving. Finish with a a shower of seasme seeds or peanuts.
Notes
Make a meal of this salad by adding 1 lb shredded chicken and sliced, roasted almonds instead of peanuts.
For variation and color, sprinkle roasted black sesame seeds over salad.
Just for fun, top with Chow Mein noodles or fried won ton strips.
