Ingredients
  

  • 1 cup butter softened
  • 1 cup sugar
  • 1 cup brown sugar
  • 3 large eggs
  • 1 1/2 cups buttermilk
  • 1 tsp vanilla extract

  • 3 1/4 cups sifted all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1/2 tsp ground cinnamon
  • 1/2 tsp ground allspice
  • 1/4 tsp ground cloves
  • 1 cup chopped pecans
  • 1 cup raisins stewed with spiced rum, drained
  • --------------------
  • 2/3 cup butter
  • 1 1/2 cup brown sugar or raw sugar
  • 4-5 Tbsp milk or cream or half n half
  • 1 cup coconut

Instructions
 

  • Place raisings in a small saucepan with enough spiced rum to cover. Simmer until raisins are plump and juicy. Allow to cool then drain.
  • Mix butter, sugars, eggs, buttermilk, and vanilla extract.
  • Mix flour, baking soda, salt, cinnamon, allspice, cloves.
  • Add flour mixture to butter-sugar-egg mixture. Stir well.
  • Add pecans and stewed raisins. Stir well.
  • Pour into a greased and floured 13-in x 9-in baking pan.
  • While baking, prepare topping. with butter, brown sugar, cream and coconut.
  • Spread topping over cake and place back in the oven {under the broiler} until golden brown…about 5 minutes. Remove from oven and cool.

Notes

If you do not care for the broiled frosting, dust the top of the cake with powdered sugar or frost with Cream Cheese Frosting.
