Spice Cake
Ingredients
- 1 cup butter softened
- 1 cup sugar
- 1 cup brown sugar
- 3 large eggs
- 1 1/2 cups buttermilk
- 1 tsp vanilla extract

- 3 1/4 cups sifted all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 tsp ground cinnamon
- 1/2 tsp ground allspice
- 1/4 tsp ground cloves
- 1 cup chopped pecans
- 1 cup raisins stewed with spiced rum, drained

- 2/3 cup butter
- 1 1/2 cup brown sugar or raw sugar
- 4-5 Tbsp milk or cream or half n half
- 1 cup coconut
Instructions
- Place raisings in a small saucepan with enough spiced rum to cover. Simmer until raisins are plump and juicy. Allow to cool then drain.
- Mix butter, sugars, eggs, buttermilk, and vanilla extract.
- Mix flour, baking soda, salt, cinnamon, allspice, cloves.
- Add flour mixture to butter-sugar-egg mixture. Stir well.
- Add pecans and stewed raisins. Stir well.
- Pour into a greased and floured 13-in x 9-in baking pan.
- While baking, prepare topping. with butter, brown sugar, cream and coconut.
- Spread topping over cake and place back in the oven {under the broiler} until golden brown…about 5 minutes. Remove from oven and cool.
Notes
If you do not care for the broiled frosting, dust the top of the cake with powdered sugar or frost with Cream Cheese Frosting.
