My Big Sister’s Brag Worthy Chili

Leonore’s chili recipe calls for an unusual ingredient: peanut butter. Turns out, there is a long tradition of adding peanut butter to chili or serving peanut butter and crackers with chili. Some people add  about 1/4 cup and still others add 1/2 cup of peanut butter for a full-bodied chili with a punch of peanut flavor. I recommend  you start with Leonore’s recommended 3 Tbsp peanut butter. Continue adding peanut butter a Tbsp at a time until your Chili tastes just right.

Ingredients
  

  • 1/2 lb ground sausage
  • 1/2 lb hamburger
  • 30 oz can light kidney beans
  • 15 oz can dark kidney beans
  • 2 green peppers chopped
  • 2 medium onions diced
  • 1 large can diced tomatoes
  • 3 Tbsp smooth peanut butter
  • 1 Tbsp chili powder
  • 1 Tbsp sugar
  • Salt to taste
  • -------------------
  • Shredded mozzarella
  • Shredded Cheddar
  • Sour Cream
  • Chives

Instructions
 

  • Brown sausage, hamburger and onions.
  • Drain grease.
  • Add tomatoes, kidney beans, chili powder,
  • and salt. Simmer 1 hour.
  • Add peppers and simmer until tender.
  • Add peanut butter and sugar just before serving. Heat through.
  • Top each bowl with with mozarella or cheddar cheese, sour cream, and chives
  • Serve with Ritz crackers or Cornbread.
