Sweet and Sour Coleslaw

This recipe is cobbled together from a variety of on-line coleslaw recipes. It is light and refreshing.

Ingredients
  

  • 1/2 cup sugar
  • 1/2 cup apple cider vinegar
  • 1/4 cup extra virgin olive oil
  • 1/2 large head green cabbage shredded
  • 1 8-oz can pineapple chunks in 100% pineapple juice drained
  • 1 cup red bell pepper thinly sliced
  • 1/2 medium sweet onion thinly sliced
  • 1 carrot coarsely shredded

Instructions
 

  • Whisk together sugar, vinegar and oil.
  • Put remaining ingredients in a large bowl.
  • Pour dressing over all and toss well.
  • Cover and refrigerate for at least 4 hours.
  • Toss again before serving.

Notes

If you need additional liquid for the dressing add some of the drained pineapple juice.
Short on time? Use a cup of Matchstix French-Cut Carrots in stead of shredding a carrot.
