Sweet and Sour Coleslaw
This recipe is cobbled together from a variety of on-line coleslaw recipes. It is light and refreshing.
Ingredients
- 1/2 cup sugar
- 1/2 cup apple cider vinegar
- 1/4 cup extra virgin olive oil
- 1/2 large head green cabbage shredded
- 1 8-oz can pineapple chunks in 100% pineapple juice drained
- 1 cup red bell pepper thinly sliced
- 1/2 medium sweet onion thinly sliced
- 1 carrot coarsely shredded
Instructions
- Whisk together sugar, vinegar and oil.
- Put remaining ingredients in a large bowl.
- Pour dressing over all and toss well.
- Cover and refrigerate for at least 4 hours.
- Toss again before serving.
Notes
If you need additional liquid for the dressing add some of the drained pineapple juice.
